1. What meat is most often associated with E. coli O157:H7?

a. Chicken
b. Ground beef
c. Steaks and roasts

2. How can we kill this organism?

a. By cooking
b. By freezing
c. Both of the above work

3. We know we want to avoid eating or serving raw or undercooked ground beef, but what is the best way to tell if it is done?

a. Check for an even brown surface color.
b. Poke it with a fork to see if it is tender.
c. Use a meat thermometer.

4. Can ground beef be safely cooked in a microwave?

a. No, a microwave does not get hot enough.
b. Yes, but care must be taken to avoid cold spots.
c. Yes, the microwave is a quick and easy way to cook ground beef.

5. What should you do if you are served undercooked ground beef when eating out?
